How to cook a cataplana?
1) In the cataplana, cook the onions, garlic, in the olive oil until the onions have browned a bit. 2) Pour in the tomatoes and the bay leaf. Cover the cataplana and lower the heat so it simmers for about 30 minutes. 3) Now add in the chourico. Cover and cook for another 30 minutes. Season with paprika or chili pepper

Boned meat, particularly chicken, lamb, and goat all tend to work well in the cataplana but feel free to throw in whatever you feel like. Onions, tomatoes, garlic, white wine, and herbs all feature in traditional Portuguese recipes, but don’t feel like you have to stick to what feels traditional.
